Broccoli Salad
This recipe for fresh broccoli salad has been part of my repertoire for so long that I can't remember where it came from. My husband, who lived on MREs and questionable protein sources in Iraq and Afghanistan, finds broccoli to be sketchy. I tend to make this for holiday dinners or cookouts where there will be extended family and friends eating. I'm not sure why my kiddos have such a difficult relationship with vegetables. My hundred pound weight loss journey should have been a great example for them about the superpowers of vegetables, but nope.
Ingredients:
1/3 c hot water
4 Tbs sugar
4 Tbs white vinegar
1 c mayo (I use Hellmann's)
2 heads fresh broccoli, washed and chopped
16 oz shredded sharp cheddar
3 oz bacon bits
Directions:
Dissolve sugar in water
Pour sugar/water mix over broccoli
Whisk vinegar into mayo
Stir in broccoli, cheese and bacon
cover with plastic wrap and chill
Good stuff. Whether it becomes part of your Easter dinner menu or your summer cookouts, I hope you enjoy this recipe!
