Broccoli Salad


This recipe for fresh broccoli salad has been part of my repertoire for so long that I can't remember where it came from. My husband, who lived on MREs and questionable protein sources in Iraq and Afghanistan, finds broccoli to be sketchy. I tend to make this for holiday dinners or cookouts where there will be extended family and friends eating. I'm not sure why my kiddos have such a difficult relationship with vegetables. My hundred pound weight loss journey should have been a great example for them about the superpowers of vegetables, but nope.


Ingredients:

  • 1/3 c hot water

  • 4 Tbs sugar

  • 4 Tbs white vinegar

  • 1 c mayo (I use Hellmann's)

  • 2 heads fresh broccoli, washed and chopped

  • 16 oz shredded sharp cheddar

  • 3 oz bacon bits

Directions:

  • Dissolve sugar in water

  • Pour sugar/water mix over broccoli

  • Whisk vinegar into mayo

  • Stir in broccoli, cheese and bacon

  • cover with plastic wrap and chill
