Cheesecake Stuffed Strawberries

Hi guys.


It was SO GOOD to have so many people under our roof for Easter this year. My Dad (Pop-Pop to the kids) was in his glory with such an audience after being in isolation for so long. He was a kidney transplant recipient in 2019, so he has had to be especially careful during the pandemic.



My job (I'm not as much of a social butterfly as my dad) is to make the food and laugh at the right places in their stories. As a side note, I think Zack is jockeying for position as the next big story-teller, and Daniel is edging in on the Dad jokes. I love them all SO MUCH.

How to make the cheesecake stuffed strawberries that were such a hit.


  • Hull your strawberries. I used this tool this time, and it made it so much easier.

  • Mix together a full block of room temperature cream cheese, 1/3 c powdered sugar and a teaspoon of vanilla extract.

  • Put mixture in a freezer bag and snip off one bottom corner of bag.

  • Pipe mixture into strawberries.

  • Crush 2 graham crackers and mix in one tablespoon melted butter.

  • Sprinkle graham cracker mixture over stuffed strawberries.


These don't keep more than a day or two, so eat up!
