Easiest Ever Low Carb Peanut Butter Cookies


Ingredients

  • 1 cup natural peanut butter

  • 1 cup Swerve granular sugar substitute

  • 1 large egg

Directions

  • Blend all ingredients together by hand

  • Scoop onto parchment paper lined cookie sheet using cookie scoop (I use this one by Wilton)

  • flatten twice in opposite directions with a fork to make the classic criss-cross pattern

  • bake at 325 degrees for five minutes, then check edges for light golden brown. Do not overbake!
