Tastier Slow Cooker Shredded Chicken


Hello there! I had an unusually un-cluttered schedule today. No urgent errands, no appointments, not too much housework. There's a cold rain falling here in the Adirondacks, but the washer and dryer are humming along, I have a candle burning on my desk and Lily the Lab is asleep on her dog bed right by my feet. She snores, which I find really soothing. Sometimes her feet move in her sleep like she's running and I think I love her a little bit more every time I see that.


This is the perfect kind of day to throw something in the slow cooker and watch a movie. I'm not a big one for being glued to the television- short attention span- but I do love to have something familiar on in the background while I do other things. Two of my favorite movies for that purpose are Nobody and War Room and if that doesn't clearly demonstrate the wide variety of things I can relate to, I don't know what else would.


Today I'm cooking some flavorful chicken in the slow cooker that I'm going to use to make buffalo chicken soup. For right now, I'm happy with my Crock Pot 8 quart manual slow cooker, but if work or school kept me away from home for most of the day I would upgrade to this 8 quart Crock Pot programmable version.


Do you boil your chicken in water to make shredded chicken? It does work, but you probably noticed it doesn't have much flavor. This takes longer, but I think it makes a big difference to be starting your recipe with chicken that tastes good all on it's own.

Ingredients

  • 3-4 boneless skinless chicken breasts, thawed

  • 1 1/2 cups chicken broth

  • 1/2 teaspoon poultry seasoning

  • freshly ground salt and pepper



Directions

  • Place slow cooker liner in slow cooker

  • Place chicken breasts in single layer in bottom slow cooker

  • Pour 1 and 1/2 cups of chicken broth over chicken

  • Sprinkle poultry seasoning over chicken

  • Grind coarse salt and whole peppercorns over chicken

  • Cover and cook on low for 4-5 hours, or until chicken can be easily shredded with two forks

  • If you prefer, place cooked chicken breasts in stand mixer fitted with paddle attachment and run on low to medium power until chicken is all shredded

What we use our slow cooked shredded chicken for:

  • buffalo chicken soup

  • buffalo chicken quesadillas

  • buffalo chicken mac and cheese

  • keto chicken and asparagus

  • keto chicken cordon bleu

  • mexican chicken soup

  • mexican chicken and black bean quesadillas

  • fresh chicken salad sandwiches
