Our Easter Menu and Apple Crisp Recipe
Easter's on it's way!
Bean and I are road-tripping tomorrow to pick up Henry at college.
Holidays are different every year now that they are all are growing up.
Henry requested apple crisp be added to the Easter menu, and I'm not going to say no when I only get him for a short weekend. Turns out we're going with a fruity theme this year, as I've been wanting to make Ambrosia for Ralph, and he requested peach cobbler. And Alex, who is not a dessert person, is guaranteed to throw down for the last piece of banana cream pie.
So here's the family recipe for you- you lose your creds if you don't know how to make this one.
Here we go:
Peel three pounds(ish) of apples. Henry likes Granny Smith. I like Macs. We always pick Macs at the orchard in the fall. Slice them thin and pile them in a 13x9 baking dish.
Soften a stick of butter in the microwave, soft but not melted. Mix in 3/4 cup of packed brown sugar, 3/4 cup quick oats, and 1/2 cup of flour. The mixture should look like clumps.
I'm not gonna lie, sometimes I double the topping just because. "My" apple crisp isn't magic, it's straight up extra sugar.
Sprinkle the crumbly topping over the top of the apples and bake at 350 degrees for 45 minutes to an hour.
Serve with vanilla ice cream.
