Peach Cobbler


Peach cobbler is one of my husband's favorite desserts. Every time I make this, I have flashbacks to Dolly Parton's character in Steel Magnolias sharing her recipe for "cuppa cuppa cuppa" with her girlfriends- and let's not forget her advice to "serve it over ice cream to cut the sweetness". Excellent advice.



Start by heating the oven to 375 degrees and melting a stick of butter in a 13x9 pan.


While the butter is melting, throw about four cups of peaches, a cup of sugar and a tablespoon of lemon juice in a saucepan and bring to a boil. I let it boil for a few minutes while I mix up the batter.



The butter is melting, the peaches are boiling, and it's time for the batter.


Mix a cup of flour, a cup of sugar, a tablespoon of baking powder and 1/4 teaspoon of salt together in a mixing bowl. Stir in a cup of milk just until combined. Lumps are fine.



Now it's time to put it together.

Pour batter over the top of butter. DO NOT STIR.



Then pour peaches over the butter and batter. Again, DO NOT STIR. Sprinkle with cinnamon.



Bake for 35 to 45 minutes until bubbly and golden.
