Strawberry Lemonade Cupcakes
Hey guys! Happy Easter weekend!
There's always lots of time spent in the kitchen for any of our family holidays. Sometimes I wonder if any of the kids are going to pick up that tradition when I'm not doing it any more. Or will they be happier ordering full meals from a restaurant or caterer? Honestly, sometimes I do consider ordering, but in the end I always choose cooking.
These strawberry lemonade themed cupcake are inspired by Henry's love of lemonade, and so yummy. Alex likes them cold, so I keep them in the fridge.
Here's the anti-food blogger instructions:
Bake up cupcakes from lemon cupcake mix. I filled the cups about 3/4 full.
While they are cooling, use something cylindrical to poke a deep hole in the middle of each cupcake.
Use a small spoon to fill each hole with canned strawberry pie filling.
When they are completely cool, frost with lemon or vanilla frosting. (I used both)
I bought the cupcake toppers LAST YEAR at Home Goods. Somehow they never got used, but this is their year.
